Overview

I have a versatile lunch recipe for you today. All you need are three peppers, some tomato puree and some grated cheeseYou can also add other ingredients like jalapenos and chunks of meat, for example. I like this recipe as you can meal prep for a week with the following list of ingredients.

Ingredients

  • 3 bell peppers, sliced in half vertically.
  • Tomato puree.
  • Grated cheese.

Recipe

  1. Slice the bell peppers in half vertically, and remove the seeds.
  2. Fill the peppers to the brim with your choice of toppings – tomato puree and grated cheese for this example.
  3. When you want to eat a half pepper, pop it in the microwave for 1 to 2 minutes to melt the tomato and cheese.
  4. Serve with a side salad.

Conclusion

I usually do a batch of 6 halves and consume a half each day for a week. You can easily adjust to make more if need be – the leftovers can be stored in a fridge covered with cling film for around a week. Give this recipe a try and let me know how you get on in the comments below.
