Best Eats – Boss Omelette

Overview

My tireless pursuit to find the perfect lunch for me has led me to an unexpected place. I wanted to find a meal which I could cook in one go that would last me around a week. This allows for batch cooking, which is a pretty neat time saver. As an experimental whim, I decided to see whether I could make a giant sized, boss omelette, and the results surpassed my expectations!

Ingredients

  • A dozen eggs
  • 750g Frozen bag of mixed vegetables
  • Salt
  • Pepper
  • Chili flakes
  • Olive oil

Preparation time: 1 hour.

Serves: 6-8 portions.

Method

Fire up that oven and preheat it to 190 degrees on fan oven setting. Pour some olive oil into a giant sized wok that can fit in your oven, and then pour the contents of the frozen vegetables into the wok. I tend to find frozen carrot, peas, beans and sweetcorn mix works well here, but any small vegetables should be fine.

Crack those 12 eggs into a bowl, add salt and give the mixture a good whisk before pouring it into the wok. Add pepper and chilli flakes to your preferred liking and then place the wok in the oven for 45 minutes to an hour.

Once it has finished cooking, remove the wok from the oven and you’re done!

Notes

If you cut into the omelette during the day of cooking, egg juices will likely spill into and over any gaps created. This is perfectly normal. Once the omelette cools down and hardens, it will be fine to cut into slices without any spill over.

Conclusion

There are a few great things about this particular recipe. The manual preparation work is fairly minimal and the ingredients are quite cheap – under £5. That is some serious value town for the bulk of a main meal which lasts a week. I like to accompany my boss omelette with crisps and fruit to complete my meal. As for the omelette itself, the ingredients are highly adaptable. You can easily replace the vegetable mix with some sliced and diced meat options. I added tofu once which was tasty but made the omelette too bulky for my preference.
